THE FULL STORY OF KOPI LUWAK COFFEE!

Kopi Luwak, also known as Civet Coffee, came into existence in the highlands of Indonesia during the early 18th Century. Kopi is the Indonesian word for coffee, and Luwak is the local Sumatran name for the Asian palm civet, a tree-living jungle cat indigenous to Indonesia.

The native farmers noticed that the wild animals, Asian Palm Civets ate the coffee fruits, leaving the coffee seeds behind in their droppings. The Indonesian people began to collect the seeds, clean and roast them, then ground them into a coffee beverage. The drink was so delicious, it quickly became a favorite of the Dutch plantation owners.

"Kopi Luwak Coffee" is a combination of one of the best Arabica coffee in the world and the legendary natural selection process from the Asian Palm Civet. They select only the best, ripest, tastiest coffee beans, and these pass through whole.

The berries come in contact with proteolytic enzymes in the stomach of these animals, which change the composition of the coffee berries. The digestive process reduces some of the acidity in the beans. After the Luwak excretes the beans the farmers collect them.

Then, the outer layer of each bean is removed, and then are carefully cleaned, and sun-dried.

Part of the magic of Kopi Luwak production comes from the healthy enzymes in their stomach, to improve the coffee taste. If the diet is deficient, this enzymatic process won't be efficient. The cultivation process produces limited quantities of these fine coffee beans.

If the animals are abused, caged, and forced to eat coffee cherry to produce coffee beans, the value of the coffee diminishes substantially due to the unnatural fermented process.
